موم شمع که در صنایع پترو شیمی تهیه می شود، هیدرو کربن هایی بلند زنجیر دارد که با شعله بدون دود می سوزند.شمع های سنتی از چربی جامد و پیه گوسفند و گاو تهیه می شوند که با شعله ای همراه با دود می سوزند زیرا حاوی اسید های چرب غیر اشباع هستند و در آن ها پیوند دوگانه کربن- کربن وجود دارد.

از نظر شیمیایی،پیه یک تری گلیسرید است، به این معنی که سه زنجیره اسید چرب دارد که به یک مولکول گلیسرول متصل هستند.اولئیک اسید دارای یک پیوند غیر اشباع بزرگترین جزء آن است.
